Dry-aging is a controlled technique that reduces excess moisture and allows natural flavor development. The result is often a cleaner taste, deeper umami, and a more tender, silky texture, especially in fish like medium-fatty tuna.

Omakase means dining “according to the chef’s choice.” Instead of ordering each item, you trust the chef to curate a seasonal progression based on what’s best that day.
We offer two omakase seatings each evening: 5:30 PM and 7:30 PM. -
Our style is rooted in the Edo-mae tradition (Tokyo-style sushi), where technique matters as much as ingredients. That can include thoughtful preparation and aging designed to balance fish, rice, and seasoning into one cohesive bite.

Yes. Atto Sushi offers two distinct ways to dine:
Main Dining Room
A sleek, minimal space with warm wood tones and a relaxed, refined feel. Ideal for à la carte dining. Omakase is available here, with nigiri served plated.
Hatou Room
A more intimate, speakeasy-style setting reserved for a traditional chef-led omakase. Nigiri is served one piece at a time, with guidance and explanations from the chef throughout the meal.

Yes. We offer a broad à la carte menu that includes sushi, sashimi, rolls, hot entrées, and seasonal specials. Last seating for à la carte is 8:15 PM.

Yes. For celebrations, business dinners, and special occasions, private dining is available in the Hatou Room.

Seats 8 guests at the counter.
Can accommodate up to 25 guests with banquet seating and standing space.
$2,500 food & beverage minimum (up to four hours).
A 20% service fee applies for large parties.
